Do you have tons of left-overs and do you waste a lot of food? I can totally see myself making stew or whatever and having left-overs in the fridge until I get around to throwing them out. This is the biggest reason I tend to stick to simpler meals, especially during the week.

I haven't made too many things in the crock pot, but if it's good, then we eat the leftovers for lunches or dinner again the next day. Today I'm making lentil soup, and we'll have it with chicken and salad tonight. Tomorrow, we'll have it with hummos, veggies, and pita bread.
We take leftovers for lunch. More than that, though, we invested in a stand-up freezer and we freeze a lot of leftovers. Since I'm the one that really doesn't enjoy cooking, and he's the one who's in the Army, I love having that freezer stash for when I just can't come up with anything.
I've also started doing the same with casseroles. I make enough for two dinners and freeze one of them.

If for some reason we do have more leftovers than 1 night, I freeze them. An easy meal for a later time. win-win
There is a series of cookbooks that I like called "Fix It and Forget It". They are all crockpot recipes, and there is one for lighter diets, one for entertaining, etc. It's published locally, but I have seen them in Barnes and Noble.
We don't have a ton of waste, my freezer is pretty organized. Our grocery budget is pretty tight right now, so we have gotten into the habit of constantly checking the freezer before we meal plan, or grocery shop.
Fix it and Forget it is a great CP book.
I cook a pot on Sunday and we have it for dinner on Monday and Wednesday. That's two nights of the week I don't have to think about dinner.
