Re: what to do with chicken and asparagus....

  • Can you grill them?  We love to throw our asparagus in some oil and balsamic add whatever season you like and toss it on the grill, throw the chicken in some marinade and toss that on the grill too!  Or if you have some alfredo sauce dice the chicken saute it in some olive oil, cut up the asparagus and do the same, cook up some bacon.  Put them all in the alfredo sauce and toss with some spaghetti or noodles of some sort!

  • Chicken breasts -- cut in half width wise and pound flat between pieces of wax/parchment paper.  Salt and pepper both sides, dredge in flour and saute/fry in some olive oil and little butter.  Turn the heat up on high after chicken is done and add to the pan some chicken broth, chicken bullion and white wine and deglaze (you can add some cornstarch/flour/arrowroot powder to the broth and whisk to thicken the liquid if desired).  Then add some lemon juice.  Cook pasta and serve chicken over bed of pasta with the sauce and voila -- chicken piccata.

For the asparagus:  steam and then toss with butter, sea salt and then squeeze some fresh lemon over it at the last and serve.  Tasty fresh meal.
