DH got me a cooking class for Christmas & it was today. It was great - everyone there said I was so smart to do this particular class. They taught us essentially 6 different meals to make and freeze ahead (some stuff would have to be fresh, but I'm OK with that).
-lamb chili with dumplings (my favorite)
-stuffed peppers with quinoa (vegetarian)
-oregano chicken used in 2 different ways (w/ couscous & on a sandwich)
-sesame chicken used in 2 different ways (rice w/ broccoli & in a salad)
each recipe made 8 servings and I was so happy to have some ideas beyond casseroles and pasta. They were great flavors with lots of spices & the components like salad that couldn't be frozen were easy to anticipate having on hand & still wouldn't add to prep time after LO is here. LMK if you want the recipes.
