s/o making things from scratch

Does anyone make their own gingerbread for a gingerbread house?  I attempted lastnight and just got the dough out of the fridge (it says to chill over night) and it's hard as a rock.  My guess is I used too much flour.  Your thoughts?

We did once and it didn't turn out (too tough and not at all stretchable).  We've bought it ever since then.

I just made my first gingerbread house (actually a gingerbread lighthouse), and I only chilled my dough for an hour, so I didn't have any trouble with it.

I do 2 hours in the fridge.
