I hope everyone had a great holiday! I ate my way through A LOT of carbs, but I did eat lots of salad too?so my weight ended up being 151, do I?m basically back where I started . I?m not too disappointed, but I?m not that happy either. I also somehow hurt my neck/back this past week, so considering I couldn?t turn my head, I decided not to exercise. So, my plan this week is to get back on track. DH has decided to join my weight loss efforts, so that should really help out ? knowing he won?t grumble (too much) about all the chicken and fish we?ll be eating is good! We?ve also decided to take the plunge and get either a treadmill or an elliptical machine, rather than join a gym ? timewise, it?s just not feasible right now.
Anyway?here are my goals for this week:

My weight loss goal for this week: 2 pounds
Exercise goal for this week: Exercise four times this week
Dietary goal: Increase vegetable intake ? eat at least one salad per day (either as a side or as an entr?e)
Motivational tip: Write out eating/exercise plan; Pay attention to how hungry I am when I eat ? stop when I?m full, even if my plate is not empty.
Recipe: Crispy White Pizza & Fettuccine Girlfredo (from Glamour Magazine) I made this for the kids for lunch, minus the onions and used a tiny bit of tomato sauce instead of the tomatoes. They all liked it and I thought it was pretty good and easy!!!
Ingredients:
? 1 La Tortilla Factory Smart & Delicious Low-Carb, High-Fiber large tortilla
? 1/3 cup fat-free ricotta cheese
? 1/4 cup thinly sliced onions
? 1 tbsp. shredded fat-free mozzarella cheese
? 6 leaves basil (Iused dried basil)
? 4 thin slices of Roma tomato
? 1/4 tsp. garlic powder
? 1/8 tsp. plus 1 dash salt
? dash black pepper
Directions:
Preheat oven to 375 degrees F. Place tortilla in baking pan sprayed lightly with nonstick spray. Bake in the oven for five to six minutes on each side, until slightly crispy. Leave oven on. In a small bowl, mix ricotta cheese, mozzarella cheese, garlic powder, 1/8 teaspoon of salt, and black pepper. Set aside. Bring a pan sprayed with nonstick spray to medium heat. Add onion, and stirring occasionally, cook until softened and slightly browned, about three minutes. Remove onions and immediately stir into cheese mixture. Spread cheese mixture evenly on top of the tortilla. Place basil over cheese mixture. Top with tomato slices, and then sprinkle with a dash of salt. Return pizza to the oven and bake for about five minutes or until entire pizza is hot. Use a pizza cutter or a sharp knife to cut into slices. Eat the whole thing?it?s pizza for one!
Fettuccine Hungry Girlfredo (I?m not sure about the tofu ? it?s just not my thing. I used whole grain pasta and this turned out pretty good! I also left out the pepper and zucchini so that everyone would eat it.)
Ingredients:
? 1 packaged House Foods Tofu Shirataki Fettuccine Shaped Noodle Substitute
? 1 wedge Laughing Cow Light Original Swiss cheese, room temperature
? 1/2 cup small broccoli florets
? 1/2 cup red pepper chunks
? 1/2 cup zucchini chunks
? 1 tbsp. fat-free sour cream
? 2 tsp. reduced-fat Parmesan-style grated topping
? salt and black pepper, to taste
? optional: garlic powder, chili powder
Directions:
Place all veggies in a medium microwave-safe bowl with 2 tablespoons water. Cover and microwave for two to three minutes, until veggies are tender. Once cool enough to handle, drain water and set aside. Rinse and drain Shirataki noodles well. Dry noodles thoroughly, using paper towels to soak up as much moisture as possible. Use a knife or kitchen shears to slice them up a bit. Place noodles in a microwave-safe bowl, and top with sour cream and Parm-style topping. Break cheese wedge into pieces and add to the bowl. Microwave for one minute. Stir well and microwave again for one minute. Mix in veggies and season well with salt and pepper. If you like, add some garlic powder and/or chili powder. Enjoy! For a side, a small mixed-green salad with low-fat balsamic vinaigrette.

I think trying to be healthier and teach my kids to be healthy is a big motivator for me. I?d hate to be one of those parents that is too physically unfit to go out and play with them. So, I guess just thinking of all the energy I have to expend while playing outside with them now, when they are still very little makes me know that I?m going to need a heck of a lot more of it as they get older!

i cheated a decent amount on T-giving... mostly on aps and dessert- didn't eat a ton of the actual meal : ) And then Sunday I had pizza, too (not my jenny craig stuff)... so my weigh in on Monday at JC I was only down .2 of a lb... i think it's funny the scale even goes down to that! I just think of it as staying the same- which I'm OK with - at least i didn't gain!!
I forget what the scale said - theirs is always different than mine so i can never remember my weight. At home my scale says 171. I'm down about 18lbs since the end of Sept - I'm happy with that!
I signed up for another 6 weeks of JC - my new goal is to get to 160.

I stayed the same as last week but I am ok with it b/c it was higher than expected b/c of the colonscopy/prep. I am just happy I was able to hang on to it. I think it helped that we had to skip Thanksgiving - my boys were really sick and then DH and I got it. The boys are feeling a lot better now and I am starting to feel better today thank goodness.
I have been saying for weeks that I am going to work out before work but I haven't done it yet. It will happen this week! I have a gym and shower at my work so the only excuse is laziness!!

Discussion topic: What is the ONE thing that REALLY motivates you to lose weight? I have been lacking motivation lately but I do think about how I felt pre-pregnancy. I had more energy and just felt better about myslef - I want to feel that again.I gained .5 pounds this week...ughhh...so I am up a total of 1.0 pounds since we started this and since I started working out 2x's a week at the gym...I did better with veggies...but with thanksgiving and pizza over the weekend I guess I didn't do as well as I thought...
This week I am going to make a big effort to eat better...and keep a food journal..I am always better when I have to be accountable...even to myself...
Pictures motivate me...the photos from thanksgiving of the girls are precious...of me, not so much...
I somehow lost 2lbs this week and I'm not going to question it.

This week I'm going to attempt to tone up and do 5 minutes of crunches every night before bed. I'm also going to cut out the eggnog this holiday season.
My main motivation right now is fitting into my clothes because every dollar I have to spend on new ones are dollars that could be going to buying a house.
