I have a recipe for soft gingerbread cookies, I've been making them for years I hope you like them. I did make gingerbread men once back in college and they turned out ok. I just dipped the cookie cutter and rolling pin in flour.
Ingredients:
2 1/4 cups flour, 2 teaspoons ground ginger, 1 teaspoon baking soda, 3/4 teaspoon ground cinnamon, 1/2 teaspoon ground cloves, 1/4 teaspoon salt, 3/4 cup butter (softened), 1 cup white sugar, 1 egg, 1 tablespoon water, 1/4 cup molasses, 2 tablespoons white sugar

Preheat oven at 350 degrees
Sift together flour, ginger, baking soda, cinnamon, cloves and salt
In a Large bowl cream together: butter and 1 cup sugar until light and fluffy. Beat in egg then stir in water and molasses. Then gradually stir in dry ingredients.
shape into walnut sized balls and then dip in remaining sugar. Bake for 8-10 minutes. Allow cookies to cool for 5 minutes before removing from baking sheet.
