They will have you print your gift log and if its on there give you store credit. So if it is something you did not register for you may be able to add it to your registry.
The Target return policy has got to be one of the worst ones in creation. We had numerous problems with our wedding one and again with our baby one.
If you don't have a receipt, you have to give them your drivers license to do the return. Then you can only return things 3 times a year without a receipt, even if it's a gift. So I would suggest taking everything at once to do one big return instead of taking things in at different times. We tried printing off our gift log to return things we received and they wouldn't accept it.
The return policy is different for registries than it is for regular non-receipt returns. Go online and update your registry to include all of the items (and quantities) that you want to return. Once that is done you can go to the store and print your registry log and return the items on that. You will get the amount back on a gift card. No license needed. Be warned: You will get the last sale price of the items instead of full retail price. This is standard retail practice because there's no way to prove that the giver didn't buy it on sale.
Edit: If the guest services team member gives you any issues with this go over their head. You can ask to speak to the GSTL (head cashier) or the LOD (store manager on duty) or just bypass them all and ask for the corporate guest services number. This is the policy according to the CORPORATE office and should not differ from store to store.

Re: What is Target's return policy?
Some times different targets will be more flexible I've found. I'd try a different location if one doesn't want to work with you!
