I'm looking for some quick, healthy meals for a toddler & preschooler. Ideally something that can be made in less than 15 minutes. No mac & cheese, chix nuggets or fish sticks please. Also, DH & I are on our own weight loss meal plans, so just giving the kids what we eat isn't an option.

I like to make casseroles, pasta dishes, etc...that freeze well. I make a bunch and just freeze them in small containers so I can just microwave them. DS loves bean/cheese quesadillas, beef/cheese soft tacos, broccoli/cheese/chicken and rice casserole, ravioli (spinach and cheese), etc...
