wanted to share- easy recipe with lots of veggies for picky eaters

This is a recipe that my grandmother made my mom, my mom made for me and now I make it for DS. I shared it with a friend of mine to help her sneak more veggies into her son's food. It really works. I thought I'd share it.

It is called Zucchini Pie- my grandmother read  the recipenin the Daily News when Bisquick first came out back in the day.

3 cups zucchini, diced (here is where I add more veggies- I've added diced red pepper, a box of frozen spinach, carrots that I've run through the food processor and sliced tomatos on the top before it goes in the oven) 1 onion, chopped 4 eggs, beaten 1 cup buttermilk baking mix (Bisquick) 1/2 cup vegetable oil 1/2 cup grated Parmesan cheese 1/2 teaspoon dried marjoram ground black pepper to taste
  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 10x6 inch pan or a 12 inch pie plate.
  2. In a medium mixing bowl, combine zucchini, onion, eggs, buttermilk baking mix, vegetable oil, Parmesan cheese, marjoram, parsley and pepper; mix well. Spread into the prepared baking dish.
  3. Bake for 30 minutes, or until lightly brown.
