actually i am making them tonight! i dont use someones recipe i kinda adapted my moms.
here goes:
4 bell peppers (i like red)
1/2lb ground beef (browned)
1/2 cup white rice (uncooked)
1/3 cup tomato sauce
enough broth to cook rice (1 cup i think i cant remember the ratio)
salt and pepper (to taste)
1/2 tsp paprika
1/8 tsp cayenne (if you dont want a little spice then dont use it
1/4 white onion (i use vidallia)
1 stalk celery
2 cloves garlic
directions:
heat oven to 350 degrees, cut tops off bell peppers and de-seed. place peppers in a pan so they fit tightly together and add a small amount of water to the bottom of the pan. bake for 20 minutes until soft.
in another sauce pan saute onion, garlic and celery in a little oil. add broth and bring to a boil. add rice and cook for 20 minutes. after rice is cooked add in ground beef, tomato sauce, and spices and fill into peppers. i like to also add a little parmasean cheese in the mix and on top. place back in the oven for 15minutes and enjoy!
If you have a pressure cooker, this is how I make mine
2 cups cooked rice 1.5 lbs ground beef 1 tsp salt 1/4 tsp pepper 6-8 Green Peppers (depending on how big they are) 2 eggs 2/3 cup chopped Onion 2 - 10oz can's of Tomato Soup 3 cups Water Shredded Cheddar or Parmesan Cheese
Mush up the ground beef, onion, salt, pepper, rice, and eggs.
Cut the tops of each pepper, wash them, and stuff them with the raw meat mixture.
Put them in a pressure cooker, dollup one tablespoon of tomato soup on top of each pepper. THen fill the bottom of the pressure cooker with the remainign tomato soup and the 3 cups of water.
Cook on high until the control jiggles on teh pressure cooker. Then continuie cooking for 15 minutes while the control jiggles.
We top our peppers after they have cooked with shredded cheese.
I don't like having to buy so many green peppers so I make this. Yum!
Unstuffed Green Peppers
1 pound ground beef

1 can diced tomatoes, undrained
? cup instant white rice, uncooked
? cup water
1 teaspoon Worcestershire sauce
1 or 2 green peppers, chopped
Cheese optional
Brown ground beef, onions, and salt and pepper.Drain off fat.Add remaining ingredients (except cheese).Bring mixture to a boil.Reduce heat and simmer covered for 20 minutes.Top with cheese if desired.
I use Emeril's recipe (sorry, no link, but it's on the Food Network site). It's got a mix of ground beef and ground pork. Delish. I'm actually making it tomorrow night.

Yes! brown the ground beef, add some minute rice (cooked), and frozen corn and cook for a lil while, then add chunky salsa and shredded cheddar cheese. Spoon the mixture into the peppers and put them in a glass baking dish, cover the bottom of hte dish with water and place a little extra cheese on the top of the peppers and cover with foil. Bake at...I believe 375 for about 25-30 minutes (until heated throughly). Delish!!!

3-4 chopped peppers (any color you like)
1 lbs ground beef
1 can tomato soup
1 1/2 cans rice
1 can water
couple tablespoons tomato sauce (any pasta sauce)
any spices you want
