casseroles

When I make them, I feel like a woman from the 1970s who can't actually cook.  I don't know why casseroles have that connotation with me.  But then I am always glad to have them because they are so easy, feed us for a few days, and are usually yummy - perfect for cool fall weather.

Do you have any good casserole recipes?

    Chicken Spaghetti, King Ranch Chicken, Taco Bake, and Baked Spaghetti are some of my faves.

    Google will give you tons of recipes for each and you can pick out which one suits you the best.

    Layers of flour tortillas, seasoned turkey meat, refried beans, spanish rice, pepper jack cheese, and enchilada sauce (green or red, doesn't matter).

    I make one that sounds sort of similar to this and I agree, it's awesome. I think I'll try adding rice next time.

    The recipe I use has meat, shredded cheese, black beans, green chiles, diced tomatoes, etc. and I use corn tortillas for the layers. I double the recipe so we have lots of leftovers.

  • DH made a tuna casserole with a can of Campbells cheddar cheese in it which makes it really good and less bland than normal tuna casserole.
  • Hippo, I feel the same way about my slow cooker.  I feel like I can't cook when I use it!  I didn't have one until recently because of it.
