appetizer help

Today is my MIL's 60th birthday party and we've been assigned appetizers.  I'm the one who always makes apps so I'm sure that's why they asked us to make them this time.  The problem is that I make apps such as tortilla roll-ups, veggie pizza, cucumber sandwiches.  Those just don't seem "nice" enough to have before a nice dinner with tenderloin.  Any suggestions for a nice (and at least somewhat easy) appetizer?

  • Chicken bacon wraps.  Get chicken tenders (raw) cut in half, season, add a small piece of jalapeno (optional), wrap tender and jap w/ bacon and secure with at toothpick then grill.  These are tedious to cook but are a hit!
  • mini quiche (so easy to make) , pigs in a blanket are always a hit, except use crissoint dough instead of bisquit dough.

  • Spinach and artichoke dip with toasted pitas, hummus with veggies, mini potato puffs.
  • costco sells the frozen mini quiche. easy and so delish!
  • You could do baked brie - just buy a big wheel of brie and some puff pastry sheets. You can add sliced apple, craisins and cinnamon if you want it a little fancier. I scrape the mold casing off of it because I hate that stuff, too bitter - but then just put the brie on the puff pastry sheet (laid flat in a pie plate) and fold the edges over to cover the cheese (if you add the other stuff just put that on top before you cover it with the puff pastry). Bake it in the oven for about 30 minutes, just check to make sure it isn't getting too brown. Serve with crackers, people LOVE it and it's super easy. (And if the brie says pasteurized on the box, you can eat it too!) Okay, now I want baked brie!!
