NTR: Cooks come in, I need help

Earlier today someone posted this crock pot recipe, and I decided to make it:?

Orange Chicken:1 1/2 pounds boneless chicken, cut in 2-inch chunks
1/2 cup flour?
olive oil, for browning the chicken
1 tablespoon?kosher salt
6 ounces (1/2 can) frozen orange juice concentrate, thawed (I'd opt for little-to-no pulp. The pulp can taste a bit bitter when cooked)
3 tablespoons?brown sugar
1 teaspoon balsamic vinegar

3 tablespoons ketchup

Well, I didn't have kosher salt, so I just substituted regular iodized salt without thinking twice. THEN, after I threw a tbsp in, I decided to look up the difference and found that kosher is less "salty" tasting and you should only substitute with half as much regular salt. Needless to say, my sauce is pretty salty tasting. :(

Is my chicken ruined? Is there anything I can still add to counteract the saltiness? TIA!?

  • The only thing i can think of is to add more sauce so that it sort of dilutes the salt. Does that make sense? GL!

  • well, it's all already in the crockpot cooking. Do you think I should add more OJ, sugar, and vinegar? Or just one of those?
  • I would just play with the amounts of ketchup, vingar, brown sugar, and orange juice until it tasted right to me.  Add little bits at a time.

  • You can also add in a potato or two, quartered, submerged in the sauce.

    Potatoes absorb salt, and any time you make a sauce or soup and have too much salt in it, you can use this trick. Any starch also sucks up and distributes sodium. You can increase your liquid by a little and add some rice. Actually, I think that would probably be really really good.

    Funny, my mom just gave me the potato ?trick, too. Of course, I don't have a single darn potato in the house. Go figure.

    I like the rice idea b/c I was going to steam rice to serve it over, anyway. I already increased the liquid by adding a ton more of the other ingredients to try and water down the saltiness. It helped a little. So, should I just dump the uncooked rice in the crockpot and it'll cook? I know, I sound so dumb. Thanks for all the tips!?

  • How long does it have to cook? I'd probably wait until about an hour before it's done in the crockpot. Add a little plain water now so it's hot enough before you add the rice. I'd say a cup of water, cup of rice, plus the extra sauce liquid, should do.

    It only has about an hour left, so I went ahead and did that. Hopefully dinner is salvaged! If not, it will just give DH one more thing to make fun of me for. :-P Thank you so much for helping me out! ?
