Egg allergy moms - do you think egg replacer would work in this?

I want to try the green chicken nuggets from toddler treats, but it calls for 1 egg and DS is allergic.  Do you think that the egg replacer (energen?) would work ?  The recipe says to combine chicken, spinach and one egg in a food proces and combine until they hold together.  My thought was coconut milk since he can tolerate that if the egg replacer won't work.

I've made those before and I'm pretty sure that would work. It was a pretty sticky mixture.

I agree, I think it would work. That stuff is pretty good. Did you seem my page to you about that cookbook? On the preemie board, about 1/2 way down now.
