DH & I are always looking for new dinners to try. Esp now that it's getting chilly at night ( who would have thought August in STL would be cold!!???)Big Smile

 If you can, post here your fave casserole/soup recipes.

  • I am really into squash soup.  I never use recipies and do everything to taste so bear with me, measurements are a guesstimate...

    1 acorn squash, cooked.  (I generally bake mine like normal, or steam it)

    1 can veg (or chic) broth

    1 cup milk

    1/2 t red chili power

    2 T butter (if you don't use it cooking the squash)

    less than 1/4 c brown sugar

    salt and pepper to taste.

    So cook the squash...  combine all ingredients and heat until warm.  I use my blender and do 1/2 the squah with each liquid before combining all.  But if you have a processer or something that would work to.

  • Easy Taco Soup:

    1 - 1 1/2 lb ground beef

    1 medium onion, chopped 

    Brown meat and onion in pan, add to slow cooker (or large pot)

    Add: 

    1 can green chiles (diced)

    3 can diced tomatoes

    3 can beans (any type, I generally use 3 different types)

    1 can corn

    1 packet taco seasoning (low sodium)

    1 packet ranch seasoning

    Cook on low for 6 hours or so. Makes a lot - at least 8 servings and freezes really well!

    Optional: add 1 TBS cayenne pepper or a can of jalapenos for extra kick.
