Happ are you around?

Did you say that your dh is a pastry chef or a chef?  I am seriously contemplating going to school to be a pastry chef/baker lately.  I would absolutely love to have a bakery of my own.  I would love to hear from someone in that line of work.

  • he's actually a chef. But we know a decent amount of pastry chefs. Baking is tough. It's not like cooking. You need to be very precise. What do you want to know? Maybe we can put you in touch with someone?

  • I know it's tough.  I love baking and decorating though.  First thing I would like to know is if there is a really good school for this in my area.  That's the most important step right now.  Also, if is something that I can support us on if I chose to do it.

  • hmm...I can ask DH and his friends about the school and t he other question too. From what I know of the business, unless you plan to open up a shop or something, it's tough to enter at a high level. The old-school rule (w/ old-school cooks) is that you have to pay your dues, work up through an apprenticeship before you land a big job. It would take a few years I think to get to a decent level of success.

    unless you fill in a void in your area of town, where it's ensured people would buy from you. 

    the other option is to get a restaurant job, or a union job with a hotel.

  • We don't have one decent bakery in town.  You pretty have to buy your cakes from Price Chopper, and they suck. 

    I already have quite a few people I do special occassion cakes for.  It would definitely fill a void!
