I have no idea if I do things properly or not...but this is what I do:
I do try and squeeze as much air as possible out before closing the bag and freezing. I have one of those storage bins where you freeze the bag upright in it and it has a thing that slides and squeezes the bags together so they are as flat as possible (and any leftover air would go to the top). I keep the bags in the bin until I use them...on maternity leave, I had enough to store in both the bottom and top of the bin---you can use the top for storage, too, instead of using it as a cover.
I try to get as much of the air out as possible, there is always a little left.
I put the bag down flat to freeze it and then I move it to a cardboard box inside the freezer and try to keep the bags mostly standing up. We have a seperate upright deep freeze so I have plenty of space.
