I meet with a dietician on Monday, so hopefully will have my head straight about how to deal with this starting then, and be able to actually monitor my glucose levels.
In the meantime, I've been trying to do 3 snacks and 3 meals a day, pairing any carb with protein, and avoiding sweets (which is what the nutritionist told me to do when I asked what to do over the weekend).
But I'm HUNGRY. I want more snacks.
So my question is, is it okay to eat some straight protein if I need something more after an "official" snack? For example, a bit ago I ate an apple and some peanuts. If I wanted to eat another snack between now and dinner, would it be okay to eat more peanuts, or some cheese?

Absolutely. If I didn't eat snacks between snacks I would pass out.
You can have as much protein as you can stand.
I would absolutely eat another snack if I were hungry. Either a protein snack or even another balanced snack. Also, one of my snacks is actually 2 carb and 1 protein, so you might be getting bigger snacks once you're on your diet plan.
I have to say that I am NOT hungry on the GD diet - it's too much food for me and I actually had to talk to the dietician about how to cut it back because I could not choke it all down. So you might be surprised to find out how much you need to eat once you talk to her.
I am kind of late but wanted to share what my nurse told me. She said to count my carbs at meal/snack time and then anything (proteins, fats,etc.) after that she doesn't care how much I eat.
For example I am allowed 15-30g of carbs for snacks. If I eat a peach(palm sized) it counts as 15g and a glass of milk(8oz) is 15g. That would be my 30g right there. After that I can have as many almonds, or as much cheese or peanut butter as I want.
