Oh porkchops, how I miss thee!  My DH doesn't eat pork (grew up in a faith that did not) so I don't get it much these days & I don't cook it.  I recall just baking it in the oven with like cream of mushroom or cream of chicken soup- something like that- and it always came out super tender. Served w/mashed potatoes & a veg.  YUM.
