Need help--Quick Dinner Ideas?

I'm going to the store to try to shop for the week. But I need quick dinner ideas (I get home after 4). I'm tired of the same old spaghetti,lasagne, and tacos...do you have any ideas?

    This is super tasty!!  DH and I both like it better than regular alfredo.

     

    ETA:  Not too easy on your hips, though.  I don't make this very often, but I don't always use heavy cream either.

  • Fish cooks really quickly - get some salmon or tilapia throw it in the oven and make some couscous and a frozen veggie or a salad.

    Also - you can just brown some chicken breasts in butter w/ some dried herbs that only takes a few minutes - serve it w/a salad or sliced tomates.  Easy, quick and light.

    Also - your crockpot should be your friend.

    Here is my go to quick meal:

    Rice & Beans
    1 c rice
    2 c water
    1 c salsa (at least medium - mild will have no flavor)
    1 can black beans (drained & rinsed)
    Frz corn (however much you want)

    Mix all together in pot, bring to boil. Reduce heat, simmer, covered until rice is done. Approx 15-20 min. Serve with shredded cheddar and sour cream. Serves 3.

  • Stuffed green peppers?  brown an onion and a lb of ground beef.  Add a can of chopped tomatoes, 1/2 cup water, 1/4 cup rice.  Cook until the rice is done (about 10 min?).  Add 1/2 to 1 cup shredded cheese.  Salt and pepper to taste.  Slice peppers in half, take out the seeds, blanch them, then stuff with the beef mixture. Top with more shredded cheese if you like.  Bake at 375 for 15 min.

    BLT's are also a summer standby for us. 

     

  • Do you have a grill?  That is our best friend right now.  We do burgers usually once a week.  Chicken breasts, sausage, next up is trying grilled pizzas.
