I'm doing a BBQ at the splash pond for ds's first bday party - so excited!  I want to offer something different though - something special and fun and delicious.  Don't really care if it is the entree, side salad, or dessert...all suggestions are welcomed!! THANKS!

BalsamicTortellini salad

1 pkg of frozen tortellini

1 pkg of good seasonings Italian seasoning salad dressing mix.  Use balsamic vinegar and instead of water use extra olive oil

Parmesan Cheese

1 bunch of scallions

Just make the tortellini, mix in the dressing and scallions.  Sprinkle parmesan cheese on top.

It's so easy and sooooo good.

Chocolate Sheath Cake:

Combine in a bowl-

2 C flour

2 C sugar

(If using buttermilk powder listed below, add powder here, and put the half cup of water in the egg mixture.  Otherwise, skip this here)

In a saucepan, combine-

3/4 C Margarine

4 Tbsp. cocoa

1 C water

Bring to a round boil, and pour over sugar-flour mixture.  Mix well and fast.  Then add:

1/2 C buttermilk

1 tsp. baking soda

2 eggs

1 tsp. cinnamon

1 tsp. vanilla

Mix and pour into a greased and floured sheet pan.  Bake 350 for 20 minutes (although in my experience, it takes much longer...you'll know when it's done...when the toothpick comes out clean)

Icing:

Bring to a boil-

1/2 C butter or margarine

4 Tbsp. cocoa

Add at once (don't take off heat yet!!!)-

1 lb. powdered sugar (4 cups)

1 tsp. vanilla

1 C chopped nuts

Stir together and pour over cake
