Eco-Friendly Family

6.5 lb zucchini

I just picked a zucchini and when we got it back into the house my doula and I weighed it- 6.5 lbs!!!

She of course used that to encourage me in my ability to birth something that size while I just sat there staring at it wondering what one cooks with that large of a squash!!

Any recipe ideas for that much?  I just make chocolate zucchini bread last week...

    Oh that does sound good- I bet it would freeze well too...

  • zucchini can get a bit mushy when you freeze it...just a heads up.  flavor stays good though!

    i made this, it was yummy!  i cooked the rice with chicken broth, used extra rice, through in some of my csa veggies...you can personalize it as you desire. yum!

  • Make some mini zuc muffins and freeze and then make some creamy chicken and zuc with sun dried tomatoes (all I do is get a can of low sodium, 98% fat free cream of chicken soup, mix with 1 can FF milk - there's your sauce. Chunk chicken into 1" chuncks, same with zuc. Reconstitute sun dried tomatoes (if they're super hard - just in some warm water). Pan cook chicken in olive oil, add zuc to cooked chicken (you may need to add some more oil), sautee. Add tomatoes and cover with the sauce. Reduce the sauce some in the pan. Serve over brown rice or whole wheat pasta :)
