I'm back

I just spent nearly $100 getting ingredients.  But, once I have cooked up what I want I should have enough freezer meals for a month plus enough dry ingredients to make another month or so of meals.  I couldn't get everything on my list because a couple things were way too expensive or the stores didn't have them and I need to go to Wal-mart for two items.  But, it's done and I can't wait to start cooking tonight and tomorrow which is all I'm doing for the next two days.  I also picked up a package of tofu and tempeh and just have to figure out what to with them to eat.  I'm still not set on any one recipe yet.  I want something maybe chinese tasting but without the ginger since it's an unpleasant trigger right now or teriyaki which I hate.

  • are you planning on freezing the tofu? if so, beware it completely changes the texture. It will turn out sort of crumbly (like feta).

    if you are going to use it fresh, i like to make "tofu parmesan" sticks. I squeeze and blot the tofu (firm), then roll in breadcrumb/parmesan mixture. Either broil or fry until light brown. serve with pasta - i esp like it with pesto sauce.

    I like tempeh with curry rice or noodles. just steam it a bit and serve. It is also good with jerk seasoning.

  • I am not freezing the tofu.  That is to eat this week.  Thanks for the recipe.  That actually sounds really good and sounds like something to look forward to!
  • I know we're not the most cost-concious grocery shoppers, but in my book, if you got enough for a month's worth of meals for only $100, you're doing really well.  Maybe I should have you meal plan for us....

  • I can do pretty well.  And don't forget I'm only cooking for one since DS will just eat only part of what I make for myself.
