even before pg i had a hard time eating most veggies.
the only ones i could stomach were corn, brocc, peas and tomatoes or cauliflower.
i ate veggies on rare occasions (same with lots of fruit other than bananas) but now I have tremendous guilt that I am depriving the LO of his nutrients.
Thankfully, I bought some cans of V8 veggie juice and can drink those down quickly. The sodium content isn't the best but it's the only thing I can do right now.

I dont mind actually eating the vegetables, but they just never sound good! Once I make the decision to eat them though I like them.
I do V8, too, just so he's getting some veggies on the days I don't have any.

I sneak them in. They have to be cooked or they come right back up. (This is a pg thing.)
For example, I stir in a little baby spinach w/ my scrambled eggs. I do chunks of onion in with my roasted potatoes. Right now we are griling a lot of veggies which is nice.
Didn't Jerry Seinfeld's wife (or someone) just come out with a cook book for all sorts of things you can sneak veggies in to like pureed squash in brownies. I think the idea was to get more veggies in your kid's diet but it sounds like it might work for us as well.

i do eat spinach salads, zucchini and carrots when i can. i just wish i could do it daily.

If you're good with salad, what I've been doing is prepping salad veggies every Sunday and putting them in Tupperware. That way all I have to do to make a salad is throw pre-chopped veggies in a bowl and pour some dressing on. It's been so much easier to salad on the weeknights when I'm too tired to do much for dinner.
