I have been craving lemon bars recently and a friend just gave me this recipe. I have not tried it yet, but most of the recipes are pretty much the same.
Luscious Lemon Bars:
Makes 24-36
1 1/2 cup plus 3 Tbsp unsifted flour 1/2 cup confectioners sugar (powdered sugar) + extra to sprinkle on top 3/4 cup cold butter (i always slice in small pieces) 4 eggs, slightly beaten 1 1/2 cup granulated sugar 1/2 cup real lemon juice from concentrate 1 Tsp. baking powder
Preheat the oven to 350.
Step 1 - The crust In a medium bowl, combine 1 1/2 c. flour and 1/2 c. confectioners sugar. Add in butter. Press into a 13x9 pan (lightly greased) Bake for 15 minutes (should start looking a little puffy, not too golden/brown)
Step 2 - The filling In a large bowl combine the eggs, granulated sugar, baking powder, lemon juice and 3 Tbsp. flour. Mix well. Pour filling over a slightly cooled crust. Bake 20-25 minutes until lightly browned. Cool. Cut and sprinkle with confectioners sugar. Keep refrigerated!
CRUST
2 cups all-purpose flour
1/2 cup powdered sugar
1 cup (2 sticks) butter or margarine, softened
FILLING
1 can (14 oz.) NESTL? CARNATION? Sweetened Condensed Milk
4 large eggs
2/3 cup lemon juice
1 tablespoon all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
4 drops yellow food coloring (optional)
1 tablespoon grated lemon peel
Sifted powdered sugar (optional)
Directions: PREHEAT oven to 350? F.
FOR CRUST: COMBINE flour and powdered sugar in medium bowl. Cut in butter with pastry blender or 2 knives until mixture is crumbly. Press lightly onto bottom and halfway up sides of ungreased 13 x 9-inch baking pan.
BAKE for 20 minutes.
FOR FILLING: BEAT sweetened condensed milk and eggs in large mixer bowl until fluffy. Beat in lemon juice, flour, baking powder, salt and food coloring just until blended. Fold in grated lemon peel; pour over crust.
BAKE for 20 to 25 minutes or until filling is set and crust is golden brown. Cool in pan on wire rack. Refrigerate for 2 hours. Cut into bars; sprinkle with powdered sugar.
I have been TRYING so hard to stay away from sweets with not much luck. Now I am craving these! Mmmm. I don't know why this baby has me craving so much sugar but I'm about sick of it!
Here is my favorite recipe from my Mom.
1/2 cup powdered sugar
2 cups flour
1 cup butter
4 eggs
2 cups supgar
1 teaspoon baking powder
1/4 teaspoon salt
2 teaspoon grated lemon peel
1/4 cup fresh lemon juice
powdered sugar
Preheat oven to 350. combine sugar and flour. Cut in butter until mixture is crumbly and size of small peas.
Press mixture in ungreased 13x9 pan. Bake 15 minutes.
Meanwhile, beat eggs, sugar, baking powder, salt, lemon peel and juice until fluffy. Pour over the hot crust. Bake 20-25 min longer or until no imprint remains when touched lightly in center. Cool in pan. While hot, sift powder sugar over top. Refridgerate 4 hours before cutting into squares.

And here's the recipe I posted earlier in the week. They're great, but I think next time 'll double the cheesecake layer because I like it a little more cheesecakey.
