The mommy group I am in has a Summer Salad Potluck on Friday and I need some inspiration! It has to be a cold salad, but any variety- pasta, veggie, fruit, tuna, egg, etc is welcome. What suggestions do you ladies have for me?
I love a Greek Pasta. Any type of pasta, marinated artichoke hearts (2 jars chopped smaller than 1/4's), Greek olives, chopped bell pepper (yellow, red, orange), sundried tomato, and feta. I usually put the olive juice on it and a little classic italian, Stir that baby up and let it sit over night, it's dang good. Sorry it's not more measured out, I winged it when I made it, but it is deffinatly a keeper.
Have you ever done the cabbage salad with raman noodles? It's crunchy and good. I'm sure you can google it.
There is also a good broc one with sunflower seeds and crumbled bacon.
And you can't go wrong with fruit sald or tomato, moz and basil--I like to do that in stacks with big tomatoes or on individual toothpicks with grape tomatoes.
