Mix wet ingredients, spices and sugar. Then add flour, gently. Then stir in zuchinni.
Bake at 350 for 70 minutes in a greased and floured loaf pan.
I also make these in muffins. The loaves take ages - normally longer than 70 minutes in my experience. I don't start checking until 70 minutes. Also, I bump up all the spices except the vanilla and just go by taste on those - but I really like cloves so that always gets about 1/2 tsp, and almost 1 tsp of nutmeg, and 1 1/2 of cinnamon.
This is my MIL's recipe for chocolate Zucchini Cake, it's so moist and delicious... I know it's not bread but in case you need a variety:
Cream together: 1/2 c. Oleo, 1/2 c. veg. oil, 1 and 3/4 c. sugar
Add: 2 eggs, 1 tsp vanilla, 1/2 c. sour milk, 4 TBSP cocoa, 2 and 1/2 c. flour, 1/2 tsp baking powder, 1 tsp baking soda
Stir in: 2 c. grated Zuccini
Pour batter in greased 9*13 pan
Sprinkle with 1/2 or whole bag of mini chocolate chips
Bake at 325 degrees for 40-45 minutes
recipe for sour milk: mix 1/2 c. milk & 1/2 TBSP lemon juice, then let stand 5 minutes, then mix in 1/4 tsp baking soda, then mix in 1/2 TBSP vinegar, finally measure out your 1/2 cup of sour milk
I think this cake is great plain but my MIL adds whipped topping before serving.
