Creole meatloaf
With your hands, mix 1 1/2 pounds ground beef, 1 small chopped onion, 1 egg, 1 slice bread torn into pieces and 1 teaspoon Cajun or Creole seasoning. Place in loaf pan, and bake at 425 degrees for 45 minutes.
During last 20 minutes of cooking, top with sauce made of 1/2 cup ketchup, 1 clove minced garlic and 1 teaspoon Creole seasoning.
My parents sometimes put applesauce in theirs (and on top of it), it sounds totally gross but the sweetness is a nice contrast to the savory ingredients--especially if you use the blend of three meats.

I like to put a pack of lipton's onion soup mix in it. it's sort of a heartier version of meat loaf.

Mix all that together...and put in pan.
Glaze:
1/2 cup ketchup, 3 T mustard, 3 T brown sugar...mix together and spread on top of meatloaf.
Bake at 350* for 1 hour.
I don't really have a recipe, but I usually do:
1 pound of ground meat
1 egg
some bread crumbs (probably about half a cup)
ketchup (probably about 2 TBSP)
parsley (about a TBSP or so)
garlic salt (about 1/8 tsp)
onions
DH requests this ALL THE TIME.

1 ? lbs Ground Beef1 chopped Onion
1 Egg
1/2?cup fine bread crumbs1/2 cup crushed saltines
? can (8 oz can) tomato sauce
1 ? tsp salt
1 tsp pepper
Mix together and put in a deep corning cookware dish. Cook at 350 degrees for 30 minutes
While that is cooking, mix together the following:
1 cup water
? can (8 oz can) tomato sauce ? the other half from above
2 tbls yellow mustard
1 tbls brown sugar
1 tbls molasses
2 tbls white vinegar
After the 30 minutes are up, pour the mixture over the top and continue baking for 1 hour and 15 minutes.?
This is pretty much my recipe except I use 1 cup Italian bread crumbs and a can of tomato soup instead of sauce. One of my favorites!
