Recipe Help - Potato dish

Anyone have a good cheesy potato recipe. I'm looking for something to serve this weekend at a Mother's Day cookout. Preferably looking for something baked, but open to ideas. TIA!

  • i just made this for easter....

    one bag frozen hashbrowns (any variety or flavor), 1 cup of sour cream, one can cream of onion soup and 2 cups of cheddar cheese.

    Combine all ingrediants except cheese in a baking dish, uncovered, at 375 for 30 minutes, then, add i cup of cheese, mix and then top with 2nd cup of cheese. bake another few minutes until cheese is melted.

    So so so so so good.

    You might want to double the recipe, this one feeds about 6? I ran out, I know that.

  • I use a bag of the Ore Ida hashbrowns with the onions and peppers then mix with a 16 oz sour cream, bag of cheese (2 cup), can of cream of mushroom soup, top with ritz crackers mixed with butter, and cover.  Cook at 350 for an hour then brown the crackers if you want.  So good and very cheesy!
