Easy recipe for us busy moms!

Just thought I would share this crockpot recipe, I just made it for dinner tonight! Its delicious 1 can black beans drained and rinsed2 cans corn drained1 16 oz jar of salsachicken breasts (3-4)Throw all of this into a crock pot, cook on high 3-4 hrs or on low 7-8 hrs. I put the mixture into tortillas w/ cheese and sour cream....Super yummy and very easy

  • Thanks. That sounds yummy. DD and I have swimming lessons Tuesday nights and I've been scouring my crockpot cookbooks so we can still enjoy dinner at home after swimming.

    Ditto!  My DH asks for this all the time.  It is sooo good!

    I make this all the time, throw them in raw!

  • Even easier, just buy a jar of black bean and corn salsa.  It's $2 for a big jar of that at Walmart.  ;-) I put my chicken in frozen and cook for 4 hours, then shred the chicken with two forks.  Love it!

    we had it for dinner tonight too.

    Mexican Vegetarian Casserole
    6 servings

    Ingredients
    1  (15 1/4-ounce) can whole kernel corn, drained
    1  (15-ounce) can black beans, rinsed and drained
    1  (10-ounce) can whole tomatoes and green chiles
    1  (8-ounce) container sour cream
    1  (8-ounce) jar picante sauce
    2  cups  (8 ounces) shredded Cheddar cheese
    2  cups cooked rice
    1/4  teaspoon  pepper
    1  bunch green onions, chopped (optional)
    1  (2 1/4-ounce) can sliced ripe olives (optional)
    1  (8-ounce) package Monterey Jack cheese, shredded

    Combine first 8 ingredients, and spoon into a lightly greased 13- x 9-inch baking dish. Sprinkle with remaining ingredients.

    Bake at 350? for 50 minutes.
