Just thought I would share this crockpot recipe, I just made it for dinner tonight! Its delicious1 can black beans drained and rinsed2 cans corn drained1 16 oz jar of salsachicken breasts (3-4)Throw all of this into a crock pot, cook on high 3-4 hrs or on low 7-8 hrs. I put the mixture into tortillas w/ cheese and sour cream....Super yummy and very easy
Thanks. That sounds yummy. DD and I have swimming lessons Tuesday nights and I've been scouring my crockpot cookbooks so we can still enjoy dinner at home after swimming.
Even easier, just buy a jar of black bean and corn salsa. It's $2 for a big jar of that at Walmart. ;-) I put my chicken in frozen and cook for 4 hours, then shred the chicken with two forks. Love it!

Mexican Vegetarian Casserole

Ingredients
1 (15 1/4-ounce) can whole kernel corn, drained
1 (15-ounce) can black beans, rinsed and drained
1 (10-ounce) can whole tomatoes and green chiles
1 (8-ounce) container sour cream
1 (8-ounce) jar picante sauce
2 cups (8 ounces) shredded Cheddar cheese
2 cups cooked rice
1/4 teaspoon pepper
1 bunch green onions, chopped (optional)
1 (2 1/4-ounce) can sliced ripe olives (optional)
1 (8-ounce) package Monterey Jack cheese, shredded
Combine first 8 ingredients, and spoon into a lightly greased 13- x 9-inch baking dish. Sprinkle with remaining ingredients.
Bake at 350? for 50 minutes.
