We are VERY lucky that our current center (that we love) lets us pay by the day. We usually use 4 days per week (DH is off one weekday) but will soon be going to 3 when I start my new job. If we still had to pay their FT rates it would put a major kink in our budget and probably hinder my ability to work PT.
Generally, I think you'll find that in-homes are more flexible regarding this. Not all of them though - our previous in-home DCP made us pay for the entire week regardless, although her FT rate was low enough that it was OK with us. It's worth asking at centers, though, you might find one that offers PT rates. I think you'll find more that do for older kids versus infants.
We found that a sitter or nanny worked better for PT. It was cheaper for us because I work 4 days a week and for that amount of time if we went with a daycare we would have had to pay for a full week.
Ours is a small center. You're right though--it is hard to find p/t daycare. Word of mouth might be your best bet. Also, try your town's website. Ours had a pretty comprehensive listing of local daycares.
It's hard to find and I've got the feeling a lot of people will take him PT but then once a FT kid comes along the PT one gets the boot. I think that's what happened with my last DCP, which was in home.
They offer everything from 1 day a week MDO to fulltime care - and every option in between. I've found several places that do this, but they've all been churches, a lot of them call themselves MDOs but offer "extended hours" that will get you care from 7am-6pm if needed.

Mine is a church based daycare.
