IHO Earth Day: Do you plant any veggies?

I have a huge area/fertilized dirt for gardening and have no idea where to start. Are there any "easy" veggies to start with and when do you plant them?

It is too early to plant here, but I am looking forward to it.

I plant tomatoes, cherry tomatoes, peppers (hot and sweeet), basil, eggplant, cucumbers, zucchini, and string beans.

They are all easy! Depending on how much room you have, zucchini and cucumbers are vines and take up more room. You have to stake (or cage) tomatoes. Eggplant and peppers you don't have to do anything to, just water them

I plant veggies all year round but down here, that's something you're able to do. Parsley is quite hearty as is sweet basil. Tomatoes do need some care but the results are worth it

I will be for the first time this year. I'm doing cucumbers, several varieties of tomatoes, eggplant, peppers and various herbs.

We plant a lot of veggies (egg plant, tomatoes, peppers, squash, lettuce, spinach, herbs, etc) but have to wait until after Memorial Day.  Last year we got a hard freeze a week before Memorial Day!  So...we always wait now.
