recipe suggestions...something with melty cheese

Hi Ladies!  I need a recipe for some kind of casserole with melted cheddar.  I have been trying to come up with something for a while but nothing will work with the ingredients I have available to me here in Germany.  No salsa, no cream of x soups (you know the campbell's staple for casseroles) and I don't like/can't eat red meat.  Any suggestions???  The best part is is that DH will do the shopping and cooking if I can find a recipe!

  • My suggestion would be to make a white sauce (cream, flour, maybe some cheese), add some chicken, noodles and veggies and then cover it with cheese. 350 degrees for half an hour should do it. You can find recipes for white sauce on any cooking website- I recommend foodnetwork.com.

  • It's not a casserole, but sometimes I bake chicken over rice and then when it's almost done add some cheese. You can also add in broccoli.

    I just had no creativity for a minute there and all I could think about was how I NEEDED some cheesy casserole ASAP! 
     

  • Here's a totally yummy mac-n-cheese casserole.  I make it all the time, and it's way easy:

     

    Note that the pot needs to be big for the cheese to thicken correctly:

    Bring to a rolling boil in a large pot:

    12 cups water (just a lot of water, it doesn't need to be measured)

    1 Tbsp salt

     

    Add and cook just until tender:

    2 cups elbow macaroni

     

    Drain and return to the pot.  Add:

    4 Tbsp unsalted butter, cut into small pieces

     

    Stire until well blended.  Add and stir together until smooth:

    one 12 ounce can evaporated milk

    12 ounces extra sharp cheddar cheese, grated

    2 large eggs, lightly beaten

    1 tsp dry mustard dissolved in 1 tsp water (optional - I don't do this)

    3/4 tsp salt

    1/2 tsp ground red pepper (optional)

     

    Set the pot over very low heat and, stirrying constantly, bring the mixture to the first bubble of a simmer, 5-10 minutes.  It should thicken noticeably.  This may take several minutes.  Increase the heat slightly if the sauce is still soupy after 5 minutes.  

     

    Pour into a casserole dish, and bake with grated cheese on top at 350 degrees F 5-10 minutes until melted.  (Do not overheat).  You can also skip this step, and just eat the pasta as macaroni and cheese.

     

    I like to add meat of some sort (usually pepperoni), but it's great without it.
