I have mine on Monday too.  My doctor put me on a special, high carb diet for today, Sat and Sun.  Lunch and dinner both require a "rich dessert".  I guess the theory being that if your body can handle this and process the sugar/carbs then you'll be good.  What I would recommend not doing is eating differently than normal (i.e., super healthy if you don't or cutting out certain foods you normally eat).  While it would really suck to fail the 3 hour, you want to know if you have gestational diabetes so that you can follow the procedures to protect you and your baby.  I would say that if your doctor did not give you any instructions then just eat how you normally do.  Don't try to manipulate the results by eating differently than you normally do or your doctor instructed.
