Middle name help

We want to use a family name for the middle name. If it's a boy, we are using Jacob after DH's grandpa and it's DH's middle name.?For a girl we want to use our grandma's names- Rose, Ruth, Catherine or Mabel. Our last names sounds like Steam.?
