Snack ideas for Gestational Diabetes?

 A friend asked me for snack ideas for her birthing class b/c someone has GD and I'm blanking.  She asked b/c I was borderline GD (I failed by like 3 pts!) with DS, but that was over 2 years ago and for the life of me I could not give her any ideas! :(

Does anyone have suggestions of a good snack that everyone would enjoy, including the mother with GD?

  • This isn't really for her class, as it can be expensive if she bought for all, but the best thing I found when I had GD was Snickers Marathon Energy bars.  They are low glycemic and don't raise blood sugar, and the multi grain crunch one tastes so much like a reg snickers, it really helped when I had cravings for sweets!

    Sugar Free Fudgsicles were great too, or frozen fruit bars by Dole.

  • You can never fail with cheese and crackers. That was my daily, go-to snack when I had it. We had it at my baby-sprinkle, too, and everyone inhaled it. We also had caprese salad(fresh mozzarella, slices of roma or steak-house tomatoes, fresh basil and kalamata olives drizzled in balsamic and olive oil. You can make a snack version using fresh mozzarella balls, cherry tomatoes and olives on kababs drizzled in the balsamic and olive oil, too. Mmmmmm. Another yummy thing we had at my sprinkle was Sugar-Free pudding parfaits(pudding and SF cool whip) layered in clear plastic cups. Deviled eggs are another low-carb option.
