Dh "made" me dinner last night for my birthday. By "made" I mean he bought prepared foods from the store and heated them up. It was delish! We had King Crab, HUGE Shrimp, Mac and Cheese, and some asparagus and leeks. Oh and he got the yummiest organic wheat bread. I think I may go make some toast with it now.
I loved the way the leeks tasted, I haven't ever had them. I have no idea how to cook them though- How do you use them in your cooking??

Roasting them with potatoes, peppers, squash, garlic,
or other combinations of veggies is also really good.

I make a potato leek soup in the crock pot that is pretty good. I wash and chop up the leeks the night before and it takes about 2 minutes to get together in the morning. I just finished up the last of the leftovers yesterday
Here is the recipe if you are interested
3 cups water
1 1.8 oz envelope white sauce mix (I use a country gravy mix because that was the closest I could find and it works well)
1 28 oz package of frozen hash brown potatoes (you could use fresh potatoes too if you have the time to wash and chop, or I also use potatoes already shredded/diced from the dairy fridge at the store)
3 medium leeks sliced
1 cup finely chopped canadian bacon or cooked ham
1 12oz can evaporated milk
1/2 teaspoon dillweed
1 8 oz container sour cream
Mix water and sauce mix. Put everything in the crockpot except the sour cream and stir together. Cook on high 3.5-4.5 hours or low 7-9 hours. Add sour cream a few minutes before ready to serve.
