Homemade potato salad (homemade dressing)

Hi!

my grandma makes the absolute best potato salad and I have been craving it like crazy. The dressing requires heating to boiling and the dressing calls for two eggs. I would assume that since I am heating the dressing with the raw eggs to boiling that it would cook the eggs.

I would think this is safe but I’m being paranoid with all the info online saying not to eat potato salad or to not eat homemade dressings with eggs.

Thoughts?

  • Always check with your doc if you're worried, but I bet you're fine. I think it's more a quantity and quality thing over not eating it at all. But again I'd check with your doc if you're worried. 

    One thing when baby comes that I find many people don't mention (especially doctors) is NO HONEY! not until they're 1. Botulism (spelling) just a heads up to FTM.

    Most salad dressing are made of egg as it as an emulsifier of the oils.  If the dressing is kept refrigerated and you know the source of where the egg is from you would be fine.  My (now retired doctor) always said be smart about things - reputable restaurants, moderation, know your sources- , and some stuff is overkill this day and age.
