  • One of our go-to dinners is turkey burgers. I found a trick that if you add Worcestershire sauce to the ground turkey it won't dry out when you cook it! I serve that over a bed of lettuce (no carbs!) and a side of sauteed green beans!

    Our go-to quick dinner is chicken burgers - we only like the ground chicken breast though. I stuff it with a tablespoon of cream cheese too! I serve it with veggies too!

    I love to make drawn out meals. I make chicken spinach and artichoke stuffed shells, lasagna, enchaladas, spaghetti sauce...

    I get frustrated when I have to make quick meals so they usually are boring and suck.

    @mvt2003 oooo that sounds delicious! We'll have to try that one for sure! So like do you make 2 thin patties and then put the scoop of cream cheese in between both patties?

    @legendairymomma hahaha quick meals are all I have time for  :D  But I like to make fancy quick meals as often as possible lol

  • @kpearse99 I buy the brick of cream cheese, and slice it into tablespoons, then I basically form the patty around it - you could also do two thin patties, but I find that more difficult to "seal".

  • The "super simple salmon" recipe.

    It's salt, garlic powder and basil sprinkled on salmon and you pan fry 5 minutes each side and DONE. It says to serve with a lemon wedge but since we never have lemons I sprinkle lemon juice on top. DH could eat it every day of his life if I let him - because of course he doesn't make it. "It wouldn't taste the same"

  • My favorite dish is a spin-off of the Pioneer Woman's Seafood pasta.  It has shrimp, scallops, cream, tomatoes, pasta yum!  But it takes a couple hours and uses almost every dish in the kitchen it seems.  Special occasion food, but I love it!

    Our go-tos are salmon, BBQ chicken, enchiladas and chicken pot pie.  I am trying to branch out a little more, but these are all ones that I normally have most of the ingredients for and don't have to look up a recipe.

  • Oh and my great-grandmother's spaghetti sauce recipe.  I can just feel all the stress melt away when I smell it cooking.  My DH will be like- babe you seem stressed, go make some meatballs.  They made a family cookbook when I got married and named it Josie Burns in honor of her.  I guess she burned food a lot!  But as an Italian married to an Italian, we love our Italian food!

  • Crockpot chicken tacos! It’s literally just 2 chicken breasts with taco seasoning rubbed all over them, sliced bell peppers and diced onions, and a jar of salsa. Cook on high for 4ish hours and then shred the chicken with a fork. We usually serve it on tortillas with sour cream and shredded lettuce. I’m not great in the kitchen (MH does most of the cooking at my house) but even I can’t mess these up!

  • Back when we ate carbs, one of my favorite dinners was sheet pan fajitas! I would throw raw chicken tenders, peppers, and onions on a baking sheet with some butter and fajita seasoning, bake that for about half an hour, and serve with tortillas and rice. Now onions have too many carbs for MH and he hates peppers so it would literally just be a plate of baked chicken for him haha!

  • @kpearse99 we are turkey burger fans as well, so easy and super fast!

    @mvt2003 sheet pan fajitas are one of the things we make again and again...so good! Definitely a carb-heavy meal though haha 

    MH and I love cooking, but also really love convenience so we have a pretty good repertoire of quick go to meals for the weeknights, then fancier meals on the weekends. Our most recent obsession has been Buddha bowls (basically grains, greens, roasted veggies, tahini, really whatever we feel like throwing in there). We have been having them once a week recently!

  • We have a quick sheet-pan chicken dinner that we love. It's minced garlic, olive oil, lemon juice and thyme brushed over the chicken, then toss green beans and chopped red potatoes with olive oil, salt and pepper, and pop it in the oven. :) Easy cleanup, too!

  • I have been cooking much more healthy foods lately, but baking bread is what I really love. I love the feeling of dough and the smell of baking bread. Mmm now I'm hungry. 

    @inthewoods23 That salmon recipe sounds awesome, and I may steal that for dinner tomorrow.

  • @fitzfizz for 2 portions of salmon, I think the recipe calls for 1.5 tsp of the garlic powder and basil, and I think only 1/4 tsp salt. It's kind of a lot but you get to coat both sides. I buy fillets with the skin on. Maybe it's not great to eat the skin but whatever. If I get the skin extra crispy DH is in love.
