I’ll be honest - I’m not the chef in our house. (I kind of avoid having to make anything ever). Look forward to seeing some ideas! I do like this turkey, lettuce, cheddar cheese and avocado sandwich from a local place.
Summer potatoes Ingredients: 6 diced potatoes Half an onion (or more if you love them like me) Olive oil Vinegar Parsley
Recipe: Dice potatoes and cook until tender. Drain potatoes and place into bowl. Dice onion and place into bowl. Coat with oil and vinegar (enough to have a little bit in the bottom of the bowl and coat all potatoes) Sprinkle with parsley to taste.
Best when refrigerated.
This is my favorite recipe from Spain. Nothing special, but delicious!
Red, white and blue potato salad: red potatoes, red onion, bacon, blue cheese, pickles, green onion. Cook potatoes, cook bacon and mix all in with salt, mayo and a bit of honey mustard. Don't add mayo til potatoes are cool.
@mccurleya and @knuttyplus2 both of those recipes sound amazing! Will have to give them a try. I’m not a cook at all so I’m following this thread closely.
I also love taco salad in the summer...tortilla chips, refried beans, cheese, lettuce, tomatoes, corn, salsa, avocado, sour cream. Add optional meat....chicken, hamburger etc. Works especially great if you have left over meat from another dinner.
