Exhaustion is already setting in, although I attribute some of that to life in general TW (especially with an 18 month old running aroumd my house) end TW. So my plan is healthy but minimal work, AKA lots of crockpot and instant pot recipes!
In no particular order: Turkey bacon burgers with sweet potatoes - daily dose of pepper Slow cooker lasagna - daily dose of pepper Pork carnitas instant pot - skinnytaste Instant pot beef chili - skinny taste
I try to plan for 3-4 meals a week to get through until the weekend, but you know what they say about the best laid plans...
We are having take out tonight while we watch the national championship game. Also on the plan is one pan ranch pork chops w veg (damn delicious) One pot kielbasa pasta (sugar apron) and crock pot buffalo chicken w pasta.
My DD and I are pescatarian (we
eat fish but no meat), and MH is a meat eater. He eats many meatless meals with
us at home, but we will often have different proteins at dinner. I looove meal planning and usually do so on Fridays, planning for Saturday-Friday.
Breakfast: some combination
of the following – hard boiled eggs, blender banana oat muffins, avocado toast,
fruit
We live out in a very small country town (population 23), an hour from the nearest grocery store so I meal plan two weeks at a time and shop every two weeks.
This week looks like this- ▪Monday: Crock Pot Stuffed Onions (like stuffed peppers, but with onions) with rice and salad ▪Tuesday: Parmesan Chicken Crescent Roll-ups with sauteed green beans ▪Wednesday: Grilled Elk Backstrap with oven roasted carrots and potatoes ▪Thursday: Venison Nachos ▪Friday: Left-overs ▪Saturday: Pot Roast ▪Sunday: Left-over Pot Roast Quesadillas
I am so impressed by you ladies! I need to get my act together. I litterally don't know what I'm cooking until that morning. So.. tonight is chicken marsala with the Campbell's skillet sauce pack! It's my first time cooking this, so fingers crossed I figure it out. I need help in the kitchen, clearly.
@megster0418 I literally talk and think about food ALL DAY LONG as a dietitian, so it comes pretty easily to me to plan a few meals each week. I usually base it off of what's on sale at the store and heavily rely on Wal-Mart grocery pick up. I also used Hellofresh and Blue Apron for a while when I couldn't get my act together- I highly recommend them!
I'm inspired by everyone having meal plans!! I will make myself do that next week! Tonight is left over Crock-Pot taco soup. It's cold and rainy here so I can't wait to be home in front of the fireplace with my PJs on eating soup.

Lunch: Coconut Chickpea Curry; Falafel veggie burgers + roasted sweet potatoes, broccoli + Brussels sprouts
S-Lemon garlic salmon (MH had steak), roasted sweet potatoes, steamed broccoli
S-Tomato soup, grilled cheese, salad
M-Falafel veggie burgers (MH will have a beef burger) + green beans
T-Eggs, hashbrowns + fruit
W-Shrimp scampi over whole wheat linguine + salad
R-Chicken salads + guac (my DD and I will have chickpeas or “chik’n” over our salads)
F-Homemade naan pizzas + salad
