What's on the menu this week? M: Ribs at my parent's house T: Picking up something on the way home (busy day) W: Italian Sausage White Bean Soup T: Leftovers F: Sloppy Joes
What is your go-to breakfast? Yogurt with fruit, a granola bar
Do you do any meal prepping on the weekends? Details? I'm hoping to do this more, as I am going to have a busy semester. So this question may be a bit self-serving. I try to portion out yogurt and cottage cheese for lunches. I make hard-boiled eggs and peel them for the week. For the soup I'm making Wednesday, I'll brown the sausage and cut up all the veggies so it can be just dump and go.
What is your meal planning method/website? I've been using Plan to Eat and while I like it, it is $40 a year. So I'm open to other options. I've tried using my planner in the past, but never was able to stick with it.
What is your favorite freezer meal? Million Dollar Spaghetti I adjust the ingredients a bit and included my changes below (because a whole stick of butter... really?). I split into two 8x8 tins to freeze (no cheddar on top). I'll thaw in fridge a day or two before, though sometimes it needs a bit more time in the oven if I only take it out a day before.
Ingredients
1 lb. of Ground Beef 1 jar of Spaghetti Sauce (I use "heart smart") (use a bit extra sauce if freezing) 8 oz of Cream Cheese (I use light)
1/4 cup of Sour Cream (I use light) 1/2 lb. of Cottage Cheese Whole1/3 Stick of Butter Cut into Thin Slices 812 oz. of Noodles (we like rotini, but spaghetti is also good) 1/2 Bag of Sharp Cheddar Cheese (don't freeze)

What is your go-to breakfast? Yogurt with banana for the kiddo and I must confess I'm bad at breakfast. I can do bagels, homemade breakfast sandwiches or toast but have been terrible about breakfast.
Do you do any meal prepping on the weekends? Details? I have done so in the past but have gotten out of the habit. I want to get back to making my Mason Jar salads every weekend and I'd like to start prepping all the fruits and veggies when I go grocery shopping so they are ready to use. I also want to start building up my freezer stash of meals. A lot of things I'm putting into our meal plan rotation are easy to make double so that some weeks I won't have to do any cook or prep. As we get closer to March, I'd like to have a decent freezer stash going to simplify things while we are adjusting. It's something I intended to do before I had C but I just ran out of time and energy.
What is your meal planning method/website? In the past I've always just put it on the family calendar/used notes on my phone or added it to my planner. I typically use Pinterest and Facebook to note recipes and I have started a family favorites recipe binder that I need to catch up on. I did look for some toddler specific tips this time around just because I have one of those and the tips I found were to make a basic menu that allows for slight variations every week because toddlers like repetition. I'm also trying to up our clean eating habits a bit by doing this and do better on our grocery bill. Without a plan we tend to stop at the store several times a week, impulse buy and eat out.
What is your favorite freezer meal? Honestly, crockpot taco meat... pick your meat ((we usually do chicken)), and add about 1 cup of water or broth, 1 packet of taco seasoning ((I use mild because I'm a baby about heat)), 1 packet of dry ranch seasoning and cook it on low for 6-8 hours. I usually mix all of the ingredients and throw it in the freezer. Defrost in the fridge overnight. Then we usually make Spanish rice, and have tons of fresh salsa, veggies, cheese, guacamole and sour cream to make burritos or deconstructed burritos.
What's on the menu this week? I generally just make a list of meals to choose from each week. We go out on Fridays to a place with a cheep happy hour.
Stir fry and bao
fresh salad with lemon tofu
sweet potato and bbq seitan
grilled eggplant stacks
What is your go-to breakfast? yogurt with musli and fresh fruit.
Do you do any meal prepping on the weekends? Details? I meal prep lunches for DH and myself. He's semi- lactose intolerant and I'm veg so we don't eat the same things for lunch. DH - grilled chicken marinated in soy/orange juice, sweet potato or quinoa, salad or steamed brocoli Me - I usually prepare a big pot of black beans and eat taco salad almost every day!
What is your meal planning method/website? I track calories with my fitness pal, but don't use a site to plan meals. I pick recipes based on the ingredients we get in our CSA, or what's fresh from the store. I love to cook so a lot of times I just wing it. But I do generally start the week with a list of meals because otherwise we resort to pasta, and we're trying to limit carbs.
What is your favorite freezer meal? Soups. When ingredients are fresh in the summer I make a huge batch of borscht or minestrone or whatever, and freeze most of it. Then in the winter I can thaw it and make a fresh loaf of bread or drop biscuits and it still feels like a fresh meal.
What's on the menu this week? Mon- BBQ and buffalo chicken pizza tuesday- pho bo with unwrapped egg rolls Wednesday- steak, sweet potatoes, cucumbers Thursday- coconut shrimp, broccoli, and rice friday- dinner at church saturday- meatloaf or meatballs and gravy with mashed cauliflower
What is your go-to breakfast? Scrambled eggs with ricotta and toast with homemade peach preserves
Do you do any meal prepping on the weekends? Details? I haven't been because our farmers Market is Monday and that's where I do most of my shopping.
What is your meal planning method/website? Pinterest helps me keep track of what we like and what we didn't. I love Skinny taste for ideas too.
What is your favorite freezer meal? we honestly don't do freezer meals. I don't like the texture of things when they are frozen and reheated.
What's on the menu this week? I love this time of year b/c DH and I make stews and crockpot meals almost weekly. Since it's VB season and I'm hardly home long enough to kiss my kids and husband goodnight, DH does a lot of the cooking unless we prep it on the weekend. Last night, we put together Stout Chicken Stew (https://www.epicurious.com/recipes/member/views/slow-cooker-stout-chicken-stew-52806721). It's amazing and it's one of our go-to easy meals when weeks get busy. I'm the kind of person who can eat the same thing fairly often and be fine with it when it's delicious, so I'll honestly eat this for dinner when I get home or pack it for lunch and dinner for the next three days!! I won't get to eat dinner at home T/Th due to matches, so I have to pack lunch and dinner those days (stew, for sure).
Monday: Asian ginger salmon California vegetables
Tuesday: Stout Chicken Stew sweet potatoes
Wednesday: Stout Chicken Stew zucchini and yellow squash
Thursday: (There's no way my kids will do three nights in a row of the stew ) paninis mixed vegetables berries
Friday: pizza roasted broc/cauliflower
What is your go-to breakfast? If DH is up for a client at the gym, he'll come home and make me scrambled eggs (3 egg whites and 1 whole egg) with sharp cheddar, and then I'll have a Kodiak Cake(sp?) which is like a freezer waffle with a little more protein. If I eat right when I get home from the gym when everyone is still sleeping, I make a smoothie (in the basement so no one wakes up!) with 1 frozen banana, 2T of PB (it used to be 1, but that didn't keep me full), and a scoop of chocolate protein powder. AMAZING.
Do you do any meal prepping on the weekends? Details? DH and I do crockpot meals pretty often when one or both of us are super busy. It's important to us to have a meat available on busy nights so we get the right balance. Our rotation often includes: stout chicken stew, Italian beef, shredded turkey breast, BBQ chicken, fiesta ranch chicken, and probably something else I'm forgetting!
I also prep snacks and have them ready for my meals at school and VB. The kids are easy b/c DS eats at daycare and DD only brings a home lunch once a week. DH grills a bunch of meat and brings it to work with steamed veggies (trainer life). We made some sweet potatoes last night that we'll each bring this week, and it's a great addition to fill out a meal when a long day is ahead.
What is your meal planning method/website? We plan our meals around the protein. If we've had a lot of chicken, we mix in something different to give ourselves a break. No matter what, we have a quick-and-easy protein option in the fridge for all of our meals. Sometimes that means breakfast for dinner when all we have is a carton of eggs
What is your favorite freezer meal? I honestly haven't done freezer meals. We had a neighbor bring over fiesta ranch chicken ingredients when we had DS, but it was just as easy to go from grocery store/fridge to crockpot as it was to prep it and put it in the freezer for later.
