Since I made the trek to the grocery store and am forced to think about this though I so don't want to, thought I would share and maybe we can get some new ideas from each other along the way.
Monday- chicken enchiladas with cheesy potatoes and peppers, fruit cocktail
Tuesday- (DD dance night) Sloppy joes and tater toys, peaches
Wednesday ( DD twirling night)Grilled cheese and soup
Thursday- turkey burgers, green beans, pears
Friday - Mexican casserole , fruit cocktail or pineapples
Weekend will pretty much be leftovers or sandwiches
Today we had pancakes, fried potatoes and veggie sausage for dinner.
Tuesday & Wednesday - leftovers from tonight and the weekend
Thursday - hummus&pita and whatever else the kids will dip in hummus, lol.
Friday - Sun - We will have 4 guests staying with us plus other people over during the day. I'm having lunch/dinner catered on Sunday for my DD's birthday. I'm thinking tacos on Friday because it's easy for everybody to build their own but no ideas for Saturday yet. Maybe spaghetti because it's easy to do a vegetarian version and a non-vegetarian version.
I'm way too exhausted to meal prep, so today I made a big carne asada with tri tip. I'm hoping we can eat that in tacos and nachos and salad for at least the next few days. DH went to the grocery store today to pick up some staples (fruit, salad, chicken, eggs) so we can put together other meals as needed. Meaning hopefully he'll do the cooking
I felt forced to meal plan with this storm coming. For a city that gets a decent amount of snow during the winter, this place is awful about dealing with it.
Monday and Tuesday - Vegetable curry and grilled chicken (makes lots of leftovers)
I have to meal plan or I end up with nothing! Monday: Lamb meatballs, basmati rice, arugula beet salad Tuesday: Olive & prune chicken, leftover rice & salad Wednesday: leftovers with hummus and pita chips (Gf) Thursday: white fish with white rice and broccoli Friday: pizza (Gf) from Costco Saturday: ramen (Gf) from Costco with homemade broth and flank steak Sunday: at in-laws
It is a layered casserole with ground turkey, black beans, corn, salsa, queso, sometimes I put refried beans instead of black beans but since baby needs folic acid black beans win! Layer it all in a pie pan with tortillas then after its baked you can add veggies like you would tacos
vegitarian version is good too with brown rice and peppers instead of ground turkey.
