W- Baked potatoes with broccoli and cheese and pork chops on the grill Th- Red Beans and Rice in the crock pot - hopefully with enough to freeze leftovers F- waiting to find out if I have plans, maybe I'll make pizza S- Baked burritos with salsa chicken
I need to make some more freezer meals, I have a couple of casseroles and a pan of enchiladas out there but the reality is I probably won't want to have the oven on for two hours by the time this baby comes. So, I may need to plan a day to make some crock pot meals in bags for the days it's too hot for the over and I'm too tired to cook. At least make some batches of stuff like spaghetti sauce or shredded chicken/pork so I can make quick tacos or something.
@alitria nice! If I make it again I'll add some garlic and Italian seasoning to it. I totally get you on the not wanting to have the oven on this summer. I couldn't have dairy the first 6 months while nursing DS so I'd like to make minimal casseroles (other than the enchiladas I'm making this week). And they'll be the first things we eat.
I'll also be making homemade pasta sauce (dairy free) and meat mix for tacos, etc.! Great minds think alike
I am behind on coming up with a meal plan cause if you look at the Let's Brag thread, I just cooked over 30 nights of meals for three families in two days. Freezer meals are gonna be a lifesaver in June!
Monday- pasta with vodka sauce (which I will be freezing a ton of the sauce) Tuesday- none (we have a class) Wednesday- baked fish Thursday- zucchini casserole Friday- pork tenderloin Saturday- idk yet
@likeabel maybe it's just because I actually really like to cook but I find I'm more likely to use stuff I freeze parts of meals (like shredded meat or sauce) and then cook it fresh than to reheat a whole meal. It tastes ok, but not quite as good as it would fresh and if all I have to do is roll up filling or boil sauce, it's makes it feel like I can manage that much. I do tend to keep some casserole type stuff in the freezer though because my husband can cook less than any adult I've ever known. When we were first married I tried to make him cook a few times and he did, but then I realized that if I made him cook, I had to eat what he cooked. So, I don't do that anymore. He'll do pretty much all the other chores, but the cooking is all me.
