Now that it's more important than ever to eat right, do you ladies have any recipes that are healthy and tasty to share? I thought it might be nice to have a collection in one place!
My personal favourite: Brocolli salad! For the salad: raw Brocolli heads, cranberries, almonds (or any seeds or nuts of your choice! Walnuts are amazing too) cheddar cheese ( or your Favourite cheese) and bacon (which can be left out if you like) For the dressing: mayo or Greek yogurt, honey (use local honey if you can!), and a little white wine vinegar. That's it! Tasty, healthy, and super easy to make!
These two curries are amazing! Also been simply roasting salmon with a bit of pesto or chilli sauce and having it with steamed broccoli and roasted sweet potatoes.
I have a good one - I actually modified it from SkinnyTaste.com and it's so, so easy. We made it last night. Takes probably 10 minutes.
Sausage & Escarole One Pot Meal
- 1 lb turkey sausage - removed from casing
- Extra virgin olive oil
- One large package fresh escarole
- 1 cup chicken broth
- Parmesan cheese to garnish (eye ball it)
Cook sausage in oil in large cast iron pot until done. Add escarole and chicken broth. Once the escarole has completely wilted, mix with sausage and remove from heat. Garnish with cheese.

I've been eating a lot of lettuce free salads. Using cauliflower, broccoli, grape tomatoes, celery, and snap peas. Bite sized pieces in a bowl with a little Parmesan and vinegar and oil dressing. This may have started with having lots of veggie platter leftovers from Halloween, but those are long gone now.

Made some killer potato soup last night, it was tasty and perfect for a cozy "winter" night (I live in arizona so I use the word winter loosely lol)
