Freezer Food Suggestions

So in the next month or so, I want to start thinking about meals I can prep and freeze...I've never done this before, though, so I'm not sure as to what meals/food does well with freezing.  Do you ladies have any suggestions?  Even if you don't have a specific recipe, I'm just needing to get an idea as to what holds up well and what doesn't.

I did find this freezer meal section under one of my favorite cook's blogs.  So that's a starting place...but most of her recipes are kind of southern/tex-mex, so I feel like I should branch out more.

What a good idea! Whenever I make a big pan of lasagna, I will put 2 pieces in each bag and freeze them separately. I also do the same when I make chicken or beef enchiladas. I have never tried just putting them in a ziplock freezer bag though. I have a vacuum sealer that I use and love. Definitely a great investment if you don't have one! *edited for poor grammar

  • We do have a vacuum sealer.  I just have zero experience freezing meals, so I'll take whatever input you have.  We recently got a deep freezer from a neighbor who was moving out, so I'm ready to fill it up.

  • Lasagna, enchiladas, taco bakes freeze well. As do pasta/potato free soups/stews, chicken/pork/beef/meatballs in some kind of sauce, and some casseroles. You could also just do freezer 'dump bags' where you prep the meal in the bag uncooked, then put it in the crockpot.

Here's some recipes that I've made and froze before:

  • Everyone has provided great suggestions so far. Muffins and biscuits and such freeze great as well for snacks/breakfast.

Pick up one of those dry bean soup mixes at your grocery store and make that according to the package and add diced tomatoes and rotisserie chicken and freeze that.

  • Wow, people really responded.  I was just going to say that soups and chili freeze well.  I've frozen chicken broth based soups, successfully.  I like to use Cooking Light as a recipe source, so here are some CL chicken soups:

Here are some general freezer recipes recommended by CL:

Finally, if you are going to freeze soup, wouldn't it be lovely to freeze some biscuits?  I like to use this King Arthur recipe to use up all of my buttermilk, anytime I need to buy some.
This recipe includes directions for freezing biscuits, and for baking them when you're ready.

I've also use the freezer instructions with this slightly difference KAF biscuit recipe:

  • I'm a vegetarian, so my suggestions will be veggie-friendly! Bonus- beans are cheap so making stuff in bulk has less sticker shock.
    - chili
    - enchiladas
    - minestrone or other veggie based soups
    - cookie dough! It will blow your mother in law's mind if you have frozen cookie dough that you use to make fresh baked cookies when she comes over!
    - muffins and brownies freeze well
-If you tend to eat lots of things with rice, make a big batch of rice and freeze it
