I'm making green bean casserole. I'm trying to get it right because one person coming for Thanksgiving is allergic to mushrooms and I have celiac, so the regular onions on top are not ok. So I fried my own onions and am now having to stop myself from snacking on them, and I used a gluten free cream of chicken soup instead. I'll see how it turns out, but hopefully it's good enough for thanksgiving! If not, I think I give up on this dish.

We're a little boring today - just spaghetti. Had pulled pork last night though, for the second time in a week. Apparently I make some darn good pulled pork lol

@menrandes - those onions you made sounds great. I'd have a hard time not snacking myself. and hey, even if the casserole doesn't turn out you've already got something tasty to put on the books.
@mflowers929 - I've been having lazy days more often than I'd like to admit and DH told me he's done with hamburger helper. It's always good to have those go to quick dishes like spaghetti though! I always like to throw a little white wine into the sauce to give it a little more dimension.
@BethKate2 - I can't say I've ever had that dish but sure sounds good!

Pacific makes a condensed version. I like their line of broths, so I figured I'd give it a shot! My previous test runs involved making it from scratch, but once I realized I am making 3 pies and 5 casseroles....Yeah I'm taking the easier way for this dish! Especially because the fried onions take a loooong time.

@forevermyfenix and @Nikolie93 - pulled pork is actually SUPER easy. It literally takes me as long to put everything together for that as it does to put together the spaghetti we had tonight. The only difference is the cooking time
@flyoffeve - I'll admit it is better than chicken fingers and fries (what MH eats regularly when I'm working. He's such a child lol). And I don't mind eating it fairly regularly. I just like to get creative in the kitchen, so it's a little, er, mainstream compared to what I'd normally make
MH has been talking about starting a "food prep" day for us though. It's very hard for us to eat healthy when I'm working, since I work until 7 and he usually is out the door by 8:15. If we did a prep day then that would make it so much easier, and since I've found out that my rice cooker pretty much doubles as a slow cooker... well, that much easier!

@Menrandes what do you do for gluten free stuffing? I've heard Whole foods sells a frozen stuffing mix, but I don't know if it's any good. This is my first g-free Thanksgiving and my first doing all the cooking, so I want to do a good job!
@whitneyandconcep I use Aleia's mix, which is really just gluten free croutons honestly. You could just dry out your favorite gluten free bread and get the same thing, but I like the convenience. I eyeball all of my measurements other than that You need about 2/3 cup butter maybe 1 1/2 to 2 cups chopped celery a chopped onion chopped carrot 2 cups chicken broth Then melt butter, around 2/3 to a cup of butter in a pan, add the onion, celery and carrot to the butter and sautee. Cook until the onions are translucent and the carrots are tender. Add salt and pepper to taste Add the broth to the mix and bring to a boil, then pour over the stuffing mix. Then I pour into a casserole dish and bake for about 20 minutes at 350. Use foil for a more moist stuffing, but bake for an additional 10 minutes without the foil if you like a crispy top. It's seriously yummy, it does remind me of stovetop, but better!

I think I could cook if I really wanted to but I think (1) it would end up unhealthy and (2) I would probably rage. It seems only know cuss words when in the kitchen lol I truly do envy people that say cooking is their woosah thing.
@pinkcamino lasagna is my favorite! My mom used to make it from scratch. I've yet to even attempt it of course.
And that gelato sounds so do good =P~

The stout (I use Guiness) makes it taste different than other beef stew recipes I've used. It's really yummy.
