I figured a place to share recipes would be a good idea? Whatever you've been making that's easy on your nausea, something that's quick after work so you can relax or just a favorite recipe you feel like sharing--do it here! This stems from the dinner @JustinsLovo mentioned in another thread! Besides, who doesn't love new dinners to add to the mix?!

  • I'll start by saying this is a quick and easy go-to during the week. My husband and and 2.5yr old son love it.
    • one package cheese tortellini
    • one container buittoni Alfredo sauce
    • one container buittoni pesto sauce

    (All found by the deli section for those that live near a Stop & Shop) Combine the Alfredo and pesto in a pot and heat through, careful not to boil. Cook tortellini. Combine everything and serve!

  • Bagged salad is my favorite thing ever right now. I just ate an entire bag of the taco salad for dinner and made frozen pizza for DH and DS.

    Chicken pot pie with pilsbury biscuits is really easy. Cook chicken, thaw some frozen vegetables, mix chicken or turkey broth (I usually have turkey since I freeze a ton of broth after every holiday) with flour until it thickens. Pour the sauce over chicken and veggies in a casserole dish, too with biscuits and cook according to biscuit directions.

    Pizza is the easiest thing ever to make. Buy a packet of pizza yeast and follow the directions on the back. Top with whatever sauce you like and use up all the veggies in the fridge plus leftover meat from the night before. Easy way to get in your veggies and keep food from going to waste.

    Since it's that time of year, I figured I'd share my mom's Pumpkin Chocolate Chip Cookie recipe with you! I'll be making these today since I just roasted and pureed my pumpkins and got just under 26 cups of pumpkin out of it! (You can absolutely use canned pumpkin from the store as well!)

    • 1 cup sugar
    • 1 cup pumpkin
    • 1/2 cup butter
    • 1 Tbs grated orange peel
    • 1 tsp. Baking powder
    • 1 tsp. baking soda
    • 1 tsp. ground cinnamon
    • 1/4 tsp. salt
    • 2 cups flour
    • chocolate chips (6oz bag but I always add extra!)

    Mix pumpkin, butter, orange peel and sugar. Stir in flour, baking powder, baking soda, cinnamon and salt. Stir in chocolate chips. Drop dough by teaspoonfuls onto ungreased cookie sheet. Bake until light brown, about 15 minutes in preheated 375F oven. ENJOY!

  • Because I said I would:

    Orange Julius:
    • 6 oz frozen orange juice concentrate
    • 1 cup milk
    • 1 cup water
    • 1/4 cup powdered sugar or granulated sugar (suggests powdered, but I used granulated and it was just as good as I was hoping!)
    • 1 tsp vanilla extract
    • 1 1/2 cups ice

    Throw all ingredients into blender until smooth and frothy! YUM

  • I may have a new dietary staple:

    Big leafy spinach salad with tomatoes, onion, olives and feta (I'd also add bacon if I had some cooked)
    Topped with slices of NY strip steak and homemade ranch dressing. 

    I may have also dipped some rosemary baguette in the extra ranch dressing.

  • I just googled/searched in Pinterest for "homemade ranch" and tweaked them all a bit. Here's what I ended up doing:

    1/2 cup mayo
    1/2 cup sour cream
    Pinch of chopped dill
    2 tsp or so of chopped Italian parsley
    1/2 tsp garlic powder
    1/2 tsp onion powder
    2 dashes paprika
    Salt
    Pepper
    Then I whisked in buttermilk, I ended up using just over 1/2 cup

    I would have added chives but the ones I got from the store went bad and I didn't want to go back. So I upped the onion powder. Also next time I'll either use less mayo or more buttermilk because I like my dressing a little thinner. 

    Just play around with it until you find what you like!

    I don't have any nausea yet, but one of my go-to recipes when I'm feeling down is butternut squash soup. My BFF (mother of 2) told me it would make great baby food thickened a little! 

     Butternut Squash Soup

     Ingredients: 
    1 butternut squash 
    1 small onion, finely chopped (1/2 to 3/4 cup) 
    2 cups broth (chicken or vegetable) 
    ground spices (cinnamon, cloves, mace or nutmeg, cayenne pepper) 
    1 tbs butter 
    salt 
    vegetable or olive oil 

     Methods: 
     Preheat the oven to 375F. Cut the squash in half lengthwise and scoop out seeds. Spread butter over the squash halves. Sprinkle spices over the top (~1/4 tsp of each, but only 1/8 tsp mace/nutmeg). Bake for 45 minutes or until soft and starting to brown on the edges. Remove from the oven and cool until you can handle it. 

    Fry the onion in about 1 tbs of oil over medium heat until light brown, about 10 min. Add the onion and broth to a blender. Scoop out the flesh of the squash into the blender. Blend until smooth. Return to a pot and bring to a low simmer. Cook for 15 minutes. Check for salt. 

     Serve with a little parmesan cheese or toasted crostini.

    Easy Pumpkin Chocolate Chip Spice Cake

    • 1 box (2 layer size) spice cake (I usually use Betty Crocker or Duncan Hines)
    • 1 pkg cream cheese, cubed, softened and divided
    • 1 cup canned pumpkin
    • 1 tsp ground cinnamon
    • 1/2 tsp ground ginger
    • 1/2 a package of Tollhouse semi-sweet chocolate chips
    • 1 cup thawed Cool Whip topping
    • 2 tbsp sugar

    Heat oven to 350 degrees.  Spray bundt pan (or you can use two small round cake pans) with cooking spray and dust with flour.  Prepare cake batter as directed on package, reducing water to 1/2 a cup and increasing oil to 1/2 a cup.  Add pumpkin, cinnamon, ginger and half the cream cheese; beat until blended.  Stir in chocolate chips.  Pour into prepared pan and bake for 40 - 45 minutes (if you use to small cake pans start checking them at 25 minutes).  Mix remaining cream cheese, cool whip and sugar until well blended (add sugar to taste); spread onto completely cooled cake.  

    This is soooo yummy.  For Thanksgiving I make two bundts and put one upside down with the other on top and ice them with orange icing and it looks like a pumpkin :).  Enjoy!
