Monday - tilapia, rice and peas Tuesday - slow cooker tomato sauce and pasta with meatballs from freezer Wednesday - split pea soup I made yesterday Thursday - sweet and sour pork loin in slow cooker with figs and mashed sweet potatoes. Friday - leftovers or eat out
For dinner all week, I'm just having a big old serving of guilt with a side of French fries. It's the end of the federal fiscal year, and DH is an acquisition program manager, so Mon and Tues are totally jacked up. Thurs is DD's family night at school and we eat dinner there. So for Wed and Fri I just said "screw it." So it's take-out and "throw crap together" week. Ugh. Hate those weeks.
Yeah, guilt here because I have had it together at the beginning of each week, and actually plan to lose it by the end of the week each week. So here, it was chipotle turkey tacos and salad last night....Tonight is tilapia/shrimp scampi/roasted veggies and tomorrow is crock pot chicken parmesan with broccoli and salad.
Thursday is Taco Bell (the kids have yogurt and a salad, then they get cheesy rollups from the drive through; the fresco tacos are on my menu).
Friday is grilling with friends, Saturday is a large group dinner date, Sunday is crock pot pork tenderloin. I cannot remember the last time I made it through a week without some sort of junk. Three kids + activities + work = something has to give....for me. I don't know how everyone else does it!
