Trouble TTC

3T Bakers? Anyone else eat their feelings??

So full disclosure... I am a compulsive baker. It seems to help me through some tougher days and distract my mind from IF. Plus yo jet to eat goodies when you're done.

There HAS to be more of us like me out there. So why not share some favorite baking recipes together??? Here goes one of my faves:

Chocolate Peanut butter fudge
Ingredients- 3 cups semi sweet choc chips, 1 can sweetened condensed milk, 1 2/3 cups peanut butter chips divided, 1.5 tsp vanilla extract, 1/2 cup whipping cream, dash salt

Line square pan with wax paper (8 or 9 inch pan)
Melt the choc child with the milk and salt in saucepan over low heat. Remove from hear and stir in 2/3 cup pb chips and vanilla. Spread into pan evenly.
Melt remaining one cup pb chips with 1/2 cup whipping cream. Stir until smooth. Spread over fudge.
Refrigerate two hours until firm!

    @Champs28, yes, yes, yes!!! I love to bake, it is very relaxing to me. I actually just posted on another thread the recipe for homemade fondant out of marshmallows. It tastes way better than the real stuff is super fun to play around with!

  • I LOVE to bake!  But one of my favorite treats to make can barely be called "baking" because it's so easy to make.  They're a huge hit with everyone though so I try to keep some around at almost all times.  Disclaimer, while very easy and only 3 ingredients, because of all the unwrapping.  In my house they're normally just referred to as pretzel treats:

    Ingredients:
    Snap Pretzels (you know, the square ones with almost a little grid inside them)
    Hershey Kisses (mix it up, try Hugs, the Mint filled ones, or Rolos for a caramel treat)
    M&Ms

    1. Preheat over to 350
    2. Unwrap kisses or rolos
    3. Place pretzels on a cookie sheet and center on kiss (or rolo) on top of each pretzel.
    4. Stick in the preheated over for 2-3 minutes
    5. Pull from the oven and immediately use an M&M to squish the kiss into the pretzel.
    6. Let cool (I usually stick in the fridge to speed up the process) so the chocolate hardens and keeps everything together.

    Trust me, they're the perfect salty sweet snack.  They're great to make around the holidays or Valentine's Day when there's a wide range of kisses in the stores!

    Impatiently Waiting CD1 to try again with Fermara Back on the bench due to giant cyst,
    who know I'd ovulate on my own after a cancelled cycle and end up with a mega cyst :(

  • Oh, thanks a lot! And on the same day as our getting healthy check-in. :) LOL

    I worked as a baker at Tim Horton's (for those of us in Canada or its vicinity), so I try to pass off to MH that although he's the professional chef, I'm a pro baker.

    Last night, he asked for pumpkin bread, so I taught him how to...measure a couple ingredients and stir the mix until just moistened, hehee! :) Just enjoyed a slice of it with whipped cream and a scoop of ice cream...please don't rat me out to the Getting Healthy group! :)

  • I eat my feelings... I find that they mostly taste like chocolate. ;)

    These are my fav. My grandparents call them Charlie Brown cookies.( That may not really be a thing...) You don't have to bake them, but they get the job done. 

    Ingredients
    • 2 cups sugar
    • 1 stick margarine
    • 1/2 cup Milk
    • 4 tablespoons cocoa
    • 2 1/2 cups Oats
    • 2 teaspoons Vanilla
    • 1/2 cup creamy peanut butter
    Directions
    Mix the sugar, margarine, milk and cocoa together. Bring to a boil for 1 minute. Mix in the oats, vanilla and peanut butter. Stir well, then drop by spoonfuls onto wax paper to cool.

  • @Champs28 Agreed! I am known for eating them straight out of the bowl, and completely avoiding the cooling step. Totally worth it.

  • My go to cookie recipe is snickerdoodles but I usually try to save them for Christmas time and then make like a million at once.

    Lately my FAVE thing is a baked peach with a scoop of frozen Greek yogurt:

    Cut one peach in half and remove pit
    Put 1/4 tablespoon butter in the center
    Sprinkle with cinnamon, nutmeg, and brown sugar
    Sprinkle with granola (I usually get vanilla honey granola at the local grocery store)
    Bake at 375 for 25 to 30 minutes
    Serve with a scoop or two of Ben & Jerry's Vanilla Honey Caramel Greek Frozen Yogurt
    ENJOY!!

  • I love to bake and have a HUGE sweet tooth so I try to avoid baking unless I have company (They can eat it so I won't!) My go to recipe is Chocolate Chip Cookies, passed down from my Great-Grandma McDonald. 

    Preheat oven to 350
    1 cup white sugar
    1 cup brown sugar
    1/2 cup crisco (butter flavored) or butter
    Blend together
    1 tsp vanilla
    2 eggs
    Beat together
    1 tsp salt
    1 tsp baking soda
    Turn mixer on slow and add flour to desired thickness ~2 -2 1/2 cups
    1 pkg Nestle Milk Chocolate Chips

    Place on AIR-BAKE baking sheet (very important or they will burn!) and bake for 9-12 minutes or until golden brown (depends on your oven). 

    These cookies are notorious for not turning out right unless a McDonald makes them. Hopefully you all have better luck!
